Sour Cream Blueberry Coffee Cake
Ingredients You’ll Need
For the Cake:
1 1/2 cups all-purpose flour
1 cup granulated sugar (reduce slightly if you prefer less sweetness)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream
1 large egg
1 teaspoon vanilla extract
1/4 cup melted unsalted butter
1 cup fresh blueberries (frozen works too; no need to thaw)
For the Streusel Topping:
1/2 cup all-purpose flour
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 cup cold unsalted butter , diced
Optional: 1 tablespoon coarse sugar for sprinkling on top
Step-by-Step Instructions
Step 1: Preheat and Prepare
Preheat your oven to 350°F (175°C) . Grease and flour an 8×8-inch or 9×9-inch baking pan, or line it with parchment paper for easy removal.
Step 2: Make the Streusel Topping
In a small mixing bowl, combine the flour , brown sugar , and cinnamon . Add the cold butter and use your fingers or a pastry cutter to work it into the dry ingredients until crumbly. Set aside.
Step 3: Mix the Cake Batter
In a medium mixing bowl, whisk together the all-purpose flour , granulated sugar , baking powder , baking soda , and salt .
In another mixing bowl, stir together the sour cream , egg , vanilla extract , and melted butter until smooth.
Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix.
Step 4: Fold in the Blueberries
Gently fold the blueberries into the batter, being careful not to crush them. Reserve a few berries for decorating the top if desired.
Step 5: Assemble the Cake
Pour the batter into the prepared baking pan and spread it out evenly with a spatula.

Sprinkle half of the streusel topping evenly over the batter, then press lightly to adhere. Reserve the remaining streusel for later.
If using, arrange the reserved blueberries on top of the streusel for added color.
Step 6: Bake the Coffee Cake
Place the pan in the preheated oven and bake for 40–45 minutes , or until a toothpick inserted into the center comes out clean.
During the last 5 minutes of baking, sprinkle the remaining streusel over the top for extra crunch.
Step 7: Cool and Serve
Let the coffee cake cool in the pan for at least 15–20 minutes before slicing. This allows the flavors to set and prevents the blueberries from oozing excessively.
Serve warm, at room temperature, or slightly chilled alongside a cup of coffee or tea for ultimate enjoyment.
