A comforting and hearty classic of British cuisine, this Cheese and Onion Pie features a rich, cheesy filling and sweet, caramelized onions encased in buttery pastry. It's perfect for a cosy dinner or a tasty lunch!

Onions: 600g, finely chopped
π§ Butter: 50g
π§ Mature cheddar cheese: 200g, grated
π₯ Whole milk: 100ml
π White bread (for breadcrumbs): 2 slices
πΏ Fresh parsley: 1 tablespoon, chopped
π§ Salt: 1/2 teaspoon
πΆοΈ Ground black pepper: 1/4 teaspoon
π° Ready-made shortcrust pastry: 500g (for base and top)
π΄ Olive oil: 1 tablespoon (for cooking the onions)
π΄ Method:
1. Cook the Onions:

Heat the olive oil and butter in a large frying pan over medium heat.
Add the onions and sautΓ© for 10-15 minutes, stirring occasionally, until they are soft and golden.
Season with salt and pepper, then remove from heat and allow to cool slightly.
2. Prepare the Breadcrumbs:
π While the onions are cooling, toast the bread slices until golden and then blitz them in a food processor until you have fine breadcrumbs.
3. Make the Filling:
π§ In a bowl, combine the grated cheese, milk, parsley, and breadcrumbs.
Add the sautΓ©ed onions and mix everything together until well combined. Taste and adjust seasoning if needed.
4. Assemble the Pie:
π₯§ Roll out the shortcrust pastry on a floured surface.
Line a pie dish (approximately 20cm in diameter) with one sheet of pastry, pressing down around the edges.
Fill with the cheese and onion mixture, spreading it evenly.
5. Top the Pie:
π° Roll out the second sheet of pastry and place it over the filling.
Pinch the edges of the top and bottom pastry together to seal.
Make a small slit in the centre to allow steam to escape during baking.
6. Bake the Pie:
π₯ Preheat the oven to 180Β°C (fan)/200Β°C (gas mark 6).
Pop the pie into the oven and bake for 25-30 minutes, or until the pastry is golden brown and crisp.
7. Serve:
