A fluffy Italian egg dish filled with tender zucchini and herbs—perfect for any time of day!
Ingredients:
• 6 eggs
• 2 medium zucchini (sliced into rounds)
• 2 tablespoons grated Parmesan
• 1 clove garlic (minced)
• Fresh basil or parsley
• Salt and pepper
• Olive oil for cooking
Instructions:
1. Sauté zucchini in olive oil with garlic until tender.
2. Beat eggs in a bowl with Parmesan, herbs, salt, and pepper.
3. Pour eggs over the zucchini in the pan.
4. Cook on low heat, letting it set.
5. Optionally, finish under the broiler to brown the top.
6. Slice and serve warm or room temperature.
