🍋🍰 Lemon log/raspberries and mascarpone 🍋🍰
Ingredients :
For the biscuit:
- 4 eggs
- 100 grams of sugar
- 100 grams of flour
- Grated lemon zest
For the garnish:
- 250 grams of mascarpone
- 100 grams of icing sugar
- Lemon juice
- Fresh raspberries
For decoration:
- Ice sugar
- Fresh raspberries
- Zest of lemon
Instructions:
1. Preheat the oven to 180°C. Beat the eggs with sugar until the mixture is white. Add flour and lemon zest and mix gently.
2. Pour the batter on a plate covered with sulfurized paper and spread it evenly. Bake for 10-12 minutes.
3. Roll the biscuit on a damp wrapper, roll it and let cool.
4. In a bowl, mix mascarpone, icing sugar and a few drops of lemon juice.
5. Roll out the cooled cookie, spread the mascarpone creme, arrange the raspberries and roll again.
6. Sprinkle with icing sugar, garnish with fresh raspberries and zest of lemon.
7. Refrigerate for at least 2 hours before serving.
