🍓🍋😍 Refreshing Summer Strawberry Lemon Dream Cake
Ingredients:
3 cups all-purpose flour
3 3/4 tsp baking powder
3/4 tsp salt
1 1/2 cups unsalted butter, room temperature
1 cup granulated sugar
6 large eggs
3 tsp vanilla extract
1 1/2 cups whole milk
1 1/2 cups fresh strawberries, diced
Zest and juice of 2 lemons
3/4 cup strawberry preserves
4 1/2 cups heavy cream
1/4 cup powdered sugar
1 1/2 tsp vanilla extract
Yellow food coloring (optional)
Fresh strawberries and lemon slices for garnish
Directions:
Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
In a medium bowl, whisk together flour, baking powder, and salt.
In a large bowl, beat butter and granulated sugar with an electric mixer until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract, lemon zest, and lemon juice.
Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
Fold in the diced strawberries.
Divide the batter evenly among the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. If desired, add a few drops of yellow food coloring and mix until combined.
Place one cake layer on a serving plate and spread with 1/4 cup strawberry preserves. Top with a layer of whipped cream.
Repeat with the second layer.
Place the third cake layer on top and frost the top and sides with the remaining whipped cream. Drizzle with additional strawberry preserves if desired.
Garnish with fresh strawberries and lemon slices and serve.
