Steak and Arugula Salad
Ingredients:
1 lb steak (ribeye, sirloin, or filet), grilled or pan-seared
4 cups arugula
1/2 cup roasted butternut squash or peaches
1/4 cup candied pecans
1/4 cup crumbled blue cheese or gorgonzola
Balsamic glaze or vinaigrette
Instructions:
Cook Steak: Grill or pan-sear steak to medium rare, rest, then slice thinly.
Assemble Salad: In a bowl, mix arugula, roasted squash or peaches, pecans, and cheese.
Top: Add sliced steak and drizzle with balsamic glaze or vinaigrette
