Creamy Garlic Butter Salmon Pasta 🍝🐟✨
Ingredients:
- 2 salmon fillets, cut into chunks
- 3 cloves garlic, minced
- 8 oz fettuccine pasta
- 2 tbsp olive oil
- 2 tbsp butter
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 tbsp lemon juice
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp red pepper flakes (optional)
- Fresh parsley, chopped for garnish
Instructions:
1. Cook the Pasta:
Begin by boiling a pot of salted water. Once it reaches a rolling boil, add the fettuccine pasta. Cook according to package instructions until al dente. Once done, drain the pasta and set it aside to keep warm.
2. Sear the Salmon:
While the pasta is cooking, season the salmon chunks with salt and black pepper. In a large skillet, heat the olive oil over medium-high heat. Sear the salmon pieces for about 2 to 3 minutes on each side, or until they are golden brown and just cooked through. Remove the salmon from the skillet and set aside on a plate.
3. Make the Garlic Butter Sauce:
In the same skillet used for the salmon, add the butter and allow it to melt over medium heat. Once melted, add the minced garlic and sauté for about 1 minute, or until the garlic becomes fragrant. Be careful not to burn it.
4. Incorporate Cream and Seasonings:
Pour in the heavy cream and lemon juice, stirring to combine. If you enjoy a little heat, add the red pepper flakes at this stage. Let the sauce simmer gently for 3 to 4 minutes, stirring occasionally, until it thickens slightly.
5. Finish the Sauce:
Gradually stir in the grated Parmesan cheese, allowing it to melt into the creamy mixture. Taste the sauce and adjust seasoning with additional salt and black pepper as desired.
6. Combine & Serve:
Add the cooked fettuccine directly into the skillet with the garlic butter sauce, tossing gently to coat the pasta evenly. Top with the seared salmon pieces, letting some of the sauce drizzle over the fish.
7. Garnish:
Sprinkle freshly chopped parsley on top for a burst of color and freshness. Serve your creamy garlic butter salmon pasta hot, and enjoy every delicious bite!
