💕😋Blueberries and cream cheese cheesecake😋💕
Ingredients :
For the base:
200 grams of Digestive or Maria biscuits
100 g de beurre fondu
For the blueberries and cream cheese layer:
250 g cream cheese
200 ml of whipped cream
100 g de sucre glas
1 teaspoon of vanilla essence
1 tablespoon of lemon juice
1 cup fresh or frozen blueberries
1 bag of unflavored jelly (7 g)
50 ml of hot water
For the top layer of blueberries:
200 g of blueberries
3 tablespoons of sugar
1 tablespoon of lemon juice
1 bag of tasteless jelly dissolved in 50 ml of hot water
For decoration:
whipped cream
Fresh blueberries
White chocolate chips (optional)
Preparation:
Preparing the base:
Mash the biscuits until they get a fine powder and mix with the melted butter.
Place the mixture in a detachable mold and press well to form the base.
Spend 20 minutes in the fridge to keep it firm.
Prepare the blueberries and cream cheese layer:
Beat the cream cheese with icing sugar, vanilla and lemon juice until smooth.
Moisturize the tasteless jelly in hot water and add it to the mix.
Infuse the whipped cream with immersive movement.
Add blueberries and mix gently.
Pour over biscuit base and refrigerate for 1 hour.
Preparing the blueberry layer:
Cook the blueberries with sugar and lemon juice until juice is released and a thick sauce is formed.
Drain the tasteless jelly in hot water and add it to the blueberry mixture.
Let it cool a bit and pour it over cheesecake.
Refrigerate for at least 4 hours or until frozen.
Decorate & Serve:
Decorate with whipped cream, more fresh blueberries and white chocolate chips.
