Steak and Eggs Breakfast Plate
Ingredients (Serves 2)
For the Steak
2 small steaks (ribeye, sirloin, or flank)
Salt and freshly ground black pepper
1 tbsp olive oil
1 tbsp butter
2 cloves garlic, smashed
1 sprig fresh thyme or rosemary (optional)
For the Eggs
4 large eggs
1 tbsp butter or oil
Salt and pepper, to taste
Fresh green onions, chopped (for garnish)
For the Potatoes
2 medium potatoes, thinly sliced
1 tbsp olive oil
Salt, pepper, and paprika, to taste
Instructions
Cook the Steak
Season the steaks with salt and pepper. Heat olive oil in a cast iron skillet over medium-high heat. Sear steaks for 3-4 minutes per side until browned and caramelized. Add butter, garlic, and herbs. Baste the steaks for 1-2 minutes, then rest for 5 minutes before serving.
Cook the Eggs
In a non-stick skillet, heat butter or oil over low-medium heat. Crack eggs into the skillet and cook until the whites are set but yolks are still runny, about 2-3 minutes. Season with salt and pepper.
Prepare the Potatoes
Heat olive oil in a separate skillet over medium heat. Add sliced potatoes and cook for 5-7 minutes per side, seasoning with salt, pepper, and paprika, until golden and crispy.
Assemble the Plate
Place the cooked steak, sunny-side-up eggs, and crispy potatoes on a plate. Garnish eggs with chopped green onions and season as desired.
Serve hot and enjoy!
