Chocolate Buttermilk Cake
Ingredients:
For the Cake:
1 ¾ cups all-purpose flour
¾ cup unsweetened cocoa powder
1 ½ teaspoons baking soda
½ teaspoon salt
1 cup granulated sugar
½ cup brown sugar, packed
½ cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
½ cup hot coffee (or hot water for non-coffee version)
For the Ganache Frosting:
1 cup heavy cream
8 oz semi-sweet chocolate, chopped
1 tablespoon unsalted butter
Directions:
Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line with parchment paper.
In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
In a large mixing bowl, beat butter with granulated sugar and brown sugar until light and fluffy. Add eggs one at a time, beating well after each. Stir in vanilla.
Alternate adding dry ingredients and buttermilk to the creamed mixture, starting and ending with the dry ingredients.
Stir in the hot coffee until just combined. The batter will be thin.
Divide the batter evenly between the prepared pans and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
Cool in pans for 10 minutes before turning out onto wire racks to cool completely.
To make the ganache, heat the cream in a saucepan over medium heat until it just begins to simmer. Pour over chopped chocolate in a bowl, let sit for 2 minutes, then stir until smooth. Add butter and stir until glossy.
Frost the cooled cake with ganache and let set before slicing.
