2 boneless, skinless chicken breasts
2 tbsp olive oil
Salt & freshly cracked black pepper to taste

4 tbsp butter ๐ง, softened
3 cloves garlic, minced ๐ง
4 oz cremini mushrooms, finely chopped
ยผ cup shredded mozzarella cheese ๐ง
ยผ cup grated Parmesan cheese ๐ง
2 tbsp fresh parsley, chopped ๐ฟ
Pinch of red pepper flakes (optional)
Salt & freshly cracked black pepper to taste

Instructions
1. Prepare the Mushroom Filling
Melt 1 tablespoon of butter in a skillet over medium heat.
Add minced garlic and cook until fragrant, about 30 seconds.
Add finely chopped mushrooms and cook until they release their moisture and start to brown, about 5-7 minutes. Season with salt and pepper.
Remove from heat and let cool slightly.
In a bowl, combine the softened remaining butter, sautรฉed mushrooms, mozzarella cheese, Parmesan cheese, chopped parsley, and red pepper flakes (if using). Mix well until thoroughly combined. Season with salt and pepper to taste.
2. Prepare the Chicken Breasts
Preheat oven to 400ยฐF (200ยฐC).
Using a sharp knife, carefully cut a deep horizontal slit into the side of each chicken breast, creating a pocket without cutting all the way through.
3. Stuff the Chicken
