Beef and Cheese Chimichangas
Ingredients:
1 pound ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon paprika
Salt and pepper to taste
1/2 cup salsa
1 1/2 cups shredded cheddar cheese
6 large flour tortillas
Oil for frying (vegetable or canola oil)
Sour cream, for serving
Fresh cilantro, chopped, for garnish
Directions:
In a large skillet over medium heat, cook ground beef, onion, and garlic until beef is browned and cooked through. Drain any excess grease.
Stir in cumin, chili powder, paprika, salt, pepper, and salsa. Cook for an additional 2-3 minutes until everything is well combined. Remove from heat.
Lay out the tortillas and spoon an equal amount of beef mixture into the center of each. Top with shredded cheddar cheese.
Fold in the sides and roll up tightly to form chimichangas.
Heat oil in a deep skillet over medium-high heat. Once hot, carefully place the chimichangas seam-side down in the oil.
Fry until golden brown and crispy, about 2-3 minutes per side.
Remove from oil and drain on paper towels.
Serve hot, garnished with sour cream and chopped cilantro.
