Easy Baked Carrot Ginger Chickpea Falafel Style Bites 🌱😋
Ingredients:
1 can (15 oz / 425g) Chickpeas, rinsed and drained well
1 cup Shredded Carrots
1/2 cup Gluten-Free Breadcrumbs or Rolled Oats
1/4 cup finely chopped Onion
2 cloves Garlic, minced
1 tablespoon Grated Fresh Ginger
1/4 cup chopped Fresh Cilantro or Parsley
1 teaspoon Ground Cumin
1/2 teaspoon Ground Coriander
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
Optional: 1 Flax Egg (1 tbsp flaxseed meal + 3 tbsp water, rested 5 mins) for binding
Directions:
1. Preheat & Prep: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. Process Chickpeas: Add the drained chickpeas to a food processor and pulse a few times until roughly chopped but not completely smooth. Transfer to a large bowl.
3. Combine Mixture: Add the shredded carrots, breadcrumbs/oats, chopped onion, minced garlic, grated ginger, chopped cilantro/parsley, cumin, coriander, salt, pepper, and optional flax egg to the bowl with the chickpeas.
4. Mix & Form: Mix everything together very well with your hands or a spoon until the mixture is evenly combined and holds together. Roll the mixture into small balls (about 1-1.5 inches in diameter) and place them on the prepared baking sheet.
5. Bake: Bake for 25-30 minutes, flipping or turning them halfway through, until the balls are golden brown, firm to the touch, and cooked through.
6. Serve: Serve warm as an appetizer, in pitas, on salads, or with your favorite sauce.
