Mango Salsa
Ingredients:
2 ripe mangoes, peeled, pitted, and diced
1/2 cup diced red bell pepper
1/4 cup diced red onion
1/4 cup chopped fresh cilantro
1 jalapeño pepper, seeded and minced (optional for heat)
2 tablespoons freshly squeezed lime juice
1 tablespoon honey or agave nectar
Salt to taste
Instructions:
Prepare Mangoes: Peel the mangoes and remove the pit. Dice the mango flesh into small cubes and place them in a large mixing bowl.
Combine Ingredients: Add the diced red bell pepper, diced red onion, chopped cilantro, and minced jalapeño pepper (if using) to the bowl with the diced mangoes.
Dress Salsa: Drizzle the freshly squeezed lime juice and honey or agave nectar over the ingredients in the bowl.
Season: Season the mango salsa with salt to taste. Toss gently to combine all the ingredients evenly.
Chill and Serve: Cover the bowl with plastic wrap and refrigerate the mango salsa for at least 30 minutes to allow the flavors to meld together.
