Ingredients:
For the Fritter Bites:
1 cup all-purpose flour
2 tbsp granulated sugar
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
2/3 cup milk
1 large egg
1 tsp vanilla extract
1 large apple, peeled, cored, and diced (about 1 cup)
Vegetable oil (for frying)
For the Glaze:
1 cup powdered sugar
2 tbsp milk
1/2 tsp vanilla extract
Directions:
Prepare the batter: In a bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt. In another bowl, whisk the milk, egg, and vanilla extract. Gradually add the wet ingredients to the dry, mixing until just combined. Gently fold in the diced apples.
Heat the oil: In a deep skillet or pot, heat 1-2 inches of oil to 350°F (175°C).
Fry the fritter bites: Drop spoonfuls of batter (about 1 tablespoon each) into the hot oil. Fry for 2-3 minutes, turning occasionally, until golden brown and crispy on all sides. Fry in batches to avoid overcrowding.
Drain: Use a slotted spoon to transfer the fritter bites to a paper towel-lined plate to drain excess oil.
Make the glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
Glaze the fritters: Once the fritter bites are slightly cooled, drizzle or dip them in the glaze. Serve warm.
