Keto Beef & Cheese Casserole
Ingredients
1 lb ground beef (or ground turkey)
2 tbsp olive oil or butter
½ cup onion, diced
2 cloves garlic, minced
1 cup mushrooms, sliced (optional)
1 cup zucchini or cauliflower, diced (instead of potatoes/pasta)
1 tsp Italian seasoning
½ tsp paprika
Salt & pepper, to taste
Sauce & Topping:
1 cup heavy cream
4 oz cream cheese
1 cup shredded cheddar cheese
½ cup mozzarella cheese
½ cup Parmesan cheese (optional, for extra flavor)
2 eggs (lightly beaten — helps bind casserole)
Instructions
Cook the Beef
Heat olive oil in a skillet.
Add onion and garlic, sauté until fragrant.
Add ground beef, cook until browned. Season with salt, pepper, paprika, and Italian seasoning.
Stir in zucchini or cauliflower, cook until just tender.
Make the Cheese Sauce
In a saucepan, heat heavy cream and cream cheese until smooth.
Stir in half the cheddar and mozzarella. Mix until melted and creamy.
Assemble the Casserole
Preheat oven to 375°F (190°C).
In a large bowl, combine beef mixture, cheese sauce, and eggs. Mix well.
Spread into a greased casserole dish.
Top with remaining cheddar, mozzarella, and Parmesan.
Bake
Bake uncovered for 25–30 minutes, until bubbly and golden brown.
