Cheesy Cajun Chicken Penne in Garlic Butter Velveeta Sauce

Ingredients:

1 pound penne pasta
2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
4 tablespoons butter
4 cloves garlic, minced
2 tablespoons Cajun seasoning
1 teaspoon paprika
8 ounces Velveeta cheese, cubed
4 ounces cream cheese, softened
1 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Salt and pepper to taste

Directions:

1. Cook the penne pasta according to package directions. Drain and set aside.
2. In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken pieces and season with Cajun seasoning, paprika, salt, and pepper. Cook until golden brown and cooked through, about 6-8 minutes. Remove chicken from skillet and set aside.
3. In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant.
4. Reduce heat to low. Add the Velveeta cheese and cream cheese to the skillet. Stir until melted and smooth.
5. Pour in the heavy cream and stir until the sauce is well combined and creamy.
6. Add the cooked penne pasta and cooked chicken to the cheese sauce. Stir until everything is evenly coated.
7. Stir in the mozzarella and Parmesan cheese until melted and the sauce is thick and glossy.
8. Season with additional salt and pepper to taste.
9. Serve immediately and enjoy!
