Chocolate Coconut Balls
Ingredients:
- 1 cup shredded unsweetened coconut
- 1/2 cup cocoa powder
- 1/3 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- A pinch of salt
- Additional shredded coconut for rolling
Directions:
1. In a medium bowl, combine shredded coconut and cocoa powder.
2. Add honey or maple syrup, melted coconut oil, vanilla extract, and salt to the bowl.
3. Mix all ingredients thoroughly until a sticky dough forms.
4. Using your hands, roll the mixture into small bite-sized balls.
5. Roll each ball in additional shredded coconut to coat.
6. Place the balls on a baking sheet lined with parchment paper.
7. Refrigerate for at least 1 hour to set before serving.
