Ginger Soy Shrimp with Spinach Orzo
Savory Ginger Soy Shrimp over Creamy Spinach Orzo
Ingredients:
12 large shrimp, peeled and deveined
1 tablespoon sesame oil
2 tablespoons soy sauce (low sodium)
1 tablespoon fresh ginger, grated
2 cloves garlic, minced
200 g orzo pasta
2 cups fresh spinach, chopped
1 tablespoon olive oil
1 teaspoon lemon zest
Salt and pepper to taste
1 green onion, sliced for garnish
Optional: red pepper flakes for heat
Directions:
Cook orzo according to package instructions, drain, and set aside.
In a bowl, mix soy sauce, sesame oil, grated ginger, and garlic. Marinate the shrimp in this mixture for 10–15 minutes.
Heat olive oil in a large skillet over medium heat. Add shrimp and cook 2–3 minutes per side until pink and opaque. Remove shrimp and set aside.
In the same skillet, sauté spinach for 2–3 minutes until wilted. Add cooked orzo and toss together, seasoning with salt, pepper, and lemon zest.
Return shrimp to the skillet and gently toss to combine with the orzo and spinach.
Plate, garnish with sliced green onions, and sprinkle red pepper flakes if desired.
