2 cups peeled and finely diced apples (about 2 medium apples; Honeycrisp or Granny Smith recommended)
For the Caramel Glaze

½ cup unsalted butter
¼ cup heavy cream
½ cup packed light brown sugar
1½ cups powdered sugar, sifted
½ tsp pure vanilla extract

Instructions

Prep and preheat: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper for easy removal.
Mix dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt until evenly blended.
Combine wet ingredients: In a separate medium bowl, whisk granulated sugar, brown sugar, oil, eggs, and vanilla until smooth. Gradually pour in the buttermilk while whisking until fully incorporated.
Make the batter: Pour the wet mixture into the dry ingredients. Stir gently with a spatula or wooden spoon just until no flour streaks remain—do not overmix. Fold in the diced apples until evenly distributed.
Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Let the cake cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before glazing.
