One-Pan Cajun Chicken Rotini in Creamy Mozzarella Garlic Cheese Sauce
Ingredients:
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 tbsp olive oil
1 tbsp Cajun seasoning
1 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1 lb rotini pasta
4 cups chicken broth
4 cloves garlic, minced
8 oz cream cheese, softened
4 oz Velveeta cheese, cubed
1 cup shredded mozzarella cheese
1/2 cup heavy cream
Directions:
In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add chicken and season with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Cook until chicken is golden brown and cooked through, about 6-8 minutes. Remove chicken from skillet and set aside.
Add rotini pasta, chicken broth, and minced garlic to the skillet. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 12-15 minutes, or until pasta is cooked through and most of the liquid has been absorbed.
Stir in cream cheese and Velveeta cheese until melted and smooth. Add mozzarella cheese and heavy cream; stir until the mozzarella is melted and the sauce is creamy and well combined.
Return the cooked chicken to the skillet and stir to combine with the pasta and sauce.
Serve immediately, garnished with extra mozzarella cheese, if desired.
