🍊 Italian Polenta Cake
Italian Polenta Cake is a moist, rustic dessert made with polenta and almonds, flavored with citrus and often served with a dusting of powdered sugar.
Ingredients
• Polenta (cornmeal): 1 cup (150 g)
• Almond flour: 1 cup (120 g)
• All-purpose flour: 1 cup (120 g)
• Sugar: ¾ cup (150 g)
• Eggs: 3 large
• Butter: ½ cup (115 g), melted
• Orange zest: 1 tbsp
• Baking powder: 1 tsp
• Powdered sugar: for dusting
• Orange slices: for decoration
Instructions
1️⃣ • Preheat oven to 350°F (175°C).
2️⃣ • Whisk eggs and sugar until pale and fluffy.
3️⃣ • Add melted butter and orange zest.
4️⃣ • Mix in polenta, almond flour, and baking powder.
5️⃣ • Pour into a greased cake pan.
6️⃣ • Bake for 30–35 minutes until golden and set.
