EASY CHEESY BROCCOLI SOUP #fallmeals
1 (10 oz.) pkg. frozen broccoli, thawed
1 medium onion, chopped fine
1 carrot, grated or chopped
1 stalk celery, sliced fine
1 potato, peeled and chopped
1/2 cup butter
1 (10 oz.) can cream of celery soup
1 can milk (use empty soup can)
1/2 tsp. garlic powder
salt and pepper, to taste
1 cup shredded cheddar cheese
Chop broccoli fine and set aside.
In a 5-quart Dutch oven, saute onion, carrot, celery, and potato in butter till soft. Add remaining ingredients and heat, saving cheese for last. Add more milk if necessary to desired consistency. Makes 4 servings
