Soupe de Poissons 🍲🐟 A classic French fish soup with a creamy and rich broth that’s perfect for any cozy dinner!
Ingredients
• 500g white fish fillets (1.1 lbs)
• 2 tbsp olive oil
• 1 onion, finely chopped
• 2 garlic cloves, minced
• 1 leek, sliced
• 400g tomatoes, chopped (14 oz)
• 1 liter fish stock (4 cups)
• 100ml white wine (⅓ cup)
• 1 tsp saffron threads
• 1 tsp paprika
Salt and pepper to taste
• Croutons and aioli for serving

Instructions
1. Heat olive oil in a large pot and sauté onion, garlic, and leek until softened.
2. Add tomatoes, paprika, saffron, salt, and pepper. Cook for 5 minutes.
3. Pour in the fish stock and white wine, bring to a boil, then reduce heat and simmer for 20 minutes.
4. Add fish fillets and cook for 10 minutes until tender.
5. Blend the soup until smooth or leave it chunky as preferred.
6. Serve with croutons and a dollop of aioli for an authentic French touch!
