Grilled Chicken & Avocado Salad Bowl π₯ππ₯
Ingredients:
β’ For the Grilled Chicken:
β’ 2 boneless, skinless chicken breasts
β’ 1 tbsp olive oil
β’ 1 tsp paprika
β’ 1/2 tsp garlic powder
β’ 1/2 tsp onion powder
β’ 1/2 tsp cumin
β’ Salt & pepper, to taste
β’ Juice of 1 lime
β’ For the Salad:
β’ 4 cups mixed greens (such as spinach, arugula, and romaine)
β’ 1 avocado, sliced
β’ 1/2 cucumber, sliced
β’ 1/2 cup cherry tomatoes, halved
β’ 1/4 red onion, thinly sliced
β’ 1/4 cup feta cheese, crumbled (optional)
β’ 1/4 cup sunflower seeds or pumpkin seeds (for crunch)
β’ For the Dressing:
β’ 2 tbsp olive oil
β’ 1 tbsp balsamic vinegar
β’ 1 tsp Dijon mustard
β’ 1 tsp honey
β’ Salt & pepper, to taste
Instructions:
1. Prepare the Grilled Chicken:
β’ In a small bowl, combine olive oil, paprika, garlic powder, onion powder, cumin, salt, pepper, and lime juice. Mix well.
β’ Coat the chicken breasts with the seasoning mixture and let them marinate for at least 15-20 minutes.
β’ Preheat a grill or grill pan over medium-high heat. Grill the chicken for 5-7 minutes per side, or until the internal temperature reaches 165Β°F (74Β°C). Remove from the grill and let the chicken rest for a few minutes before slicing it into strips.
2. Prepare the Salad:
β’ In a large salad bowl, toss together the mixed greens, avocado slices, cucumber, cherry tomatoes, and red onion.
β’ Add crumbled feta and sunflower or pumpkin seeds for added texture and flavor.
3. Make the Dressing:
β’ In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper until smooth and emulsified.
4. Assemble the Salad Bowl:
β’ Divide the salad mixture into individual bowls. Top each bowl with the grilled chicken strips and drizzle with the homemade dressing.
5. Serve:
