Ingredients
For the Crust:
1 ½ cups graham cracker crumbs
¼ cup melted butter
2 tbsp sugar
For the Cheesecake Layer:
16 oz cream cheese, softened
½ cup sugar
2 tsp vanilla extract
2 large eggs
Zest of 1 lime
For the Lime Mousse:
1 cup heavy whipping cream
¼ cup powdered sugar
½ cup lime juice (freshly squeezed)
1 packet (2 ½ tsp) unflavored gelatin
2 tbsp water
Directions
1️⃣ Prepare the Crust:
Preheat oven to 325°F (163°C). Mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan and bake for 10 minutes. Let cool.
2️⃣ Make the Cheesecake Layer:
Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing just until combined. Stir in lime zest. Pour over crust and bake for 25-30 minutes or until set. Let cool completely.
3️⃣ Prepare the Lime Mousse:
In a small bowl, sprinkle gelatin over water and let it bloom for 5 minutes. Microwave for 10 seconds to dissolve. Whisk into lime juice.
4️⃣ In a separate bowl, whip heavy cream and powdered sugar to stiff peaks. Gently fold in the lime juice mixture. Spread over the cooled cheesecake layer.
5️⃣ Chill & Serve:
Refrigerate for at least 4 hours (overnight is best). Garnish with lime slices and zest before serving.
