No-Bake Pineapple Mousse Cheesecake
Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup brown sugar
6 tablespoons unsalted butter, melted
16 oz cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 cup crushed pineapple, well-drained
1 cup heavy whipping cream
1/2 cup powdered sugar
1 cup pineapple chunks (for topping)
Whipped cream, for garnish (optional)
Directions:
In a bowl, mix graham cracker crumbs, brown sugar, and melted butter until evenly moistened. Press mixture into the bottom of a 9-inch springform pan. Chill for 20 minutes.
In a large bowl, beat cream cheese until smooth. Add granulated sugar and vanilla, and continue mixing until creamy.
Stir in the crushed pineapple until evenly distributed.
In a separate bowl, beat the heavy cream and powdered sugar until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
Spoon filling over the chilled crust and smooth the top. Cover and refrigerate for at least 6 hours, or overnight for best results.
Before serving, top with pineapple chunks and dollops of whipped cream if desired.
