4 medium potatoes, cut into chunks

3 carrots, peeled and cut into sticks

2 zucchini, sliced

1 red onion, quartered

2 tbsp butter, melted

1 tbsp fresh parsley, chopped (for garnish)

Preheat your oven:
Preheat the oven to 425°F (220°C).

Prepare the chicken:
Pat the chicken dry with paper towels. Rub the chicken all over with olive oil, then season generously with salt, pepper, rosemary, and thyme. Stuff the cavity of the chicken with lemon halves and garlic cloves for extra flavor.

Prepare the vegetables:
