Healthy Raw Key Lime Pie Snack Bars - Easy & Delicious Recipe 🌟🍋🥥

Ingredients:
Base Layer:
1 cup (140g) raw almonds or walnuts
1/2 cup (85g) pitted dates, soaked if dry
Pinch of salt

Key Lime Layer:
1.5 cups (210g) raw cashews, soaked for at least 4 hours or overnight
1/2 cup (120ml) full-fat coconut milk (from the top of a chilled can) or coconut cream
1/3 cup (80ml) fresh lime juice (from 2-3 large limes or more key limes)
1/3 cup (80ml) maple syrup or agave nectar
1/4 cup (60ml) coconut oil, melted
Zest of 2 large limes
1 teaspoon vanilla extract

Directions:
1. Line an 8x8 inch (20x20 cm) square baking pan with parchment paper, leaving some overhang for easy removal.
2. Make the base layer: Add almonds (or walnuts), dates, and salt to a food processor. Process until the mixture is crumbly but sticks together when pressed between your fingers. Press this mixture firmly and evenly into the bottom of the prepared pan. Place in the freezer while you make the filling.
3. Make the key lime layer: Drain and rinse the soaked cashews thoroughly. Add the cashews, coconut milk/cream, lime juice, maple syrup/agave, melted coconut oil, lime zest, and vanilla extract to a high-speed blender.
4. Blend on high speed until completely smooth and creamy, scraping down the sides as needed. This may take a few minutes depending on your blender. The mixture should be very thick and luscious.
5. Pour the key lime filling over the chilled base layer in the pan, smoothing the top with a spatula.
6. Optional: Sprinkle extra lime zest or toasted coconut flakes on top.
7. Freeze the bars for at least 4-6 hours, or until completely firm.
8. Once firm, use the parchment paper overhang to lift the block out of the pan. Let it sit at room temperature for 5-10 minutes before slicing into bars or squares with a sharp knife.
9. Store the bars in an airtight container in the freezer for longer storage or in the refrigerator for up to a week (they will soften).
