🍓 Red Velvet Strawberry Cheesecake

For the Red Velvet Cake Layer:
1 ½ cups all-purpose flour
1 cup granulated sugar
1 tbsp unsweetened cocoa powder
1 tsp baking soda
½ tsp salt
1 cup vegetable oil
½ cup buttermilk
2 large eggs
2 tsp red food coloring
1 tsp vanilla extract
1 tsp white vinegar
For the Cheesecake Layer:
16 oz (2 blocks) cream cheese, softened
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup sour cream
Topping:
1 ½ cups fresh strawberries, sliced
½ cup strawberry glaze or strawberry jam
Whipped cream (optional)
🔥 Directions:
1. Bake the Red Velvet Cake:
Preheat oven to 350°F (175°C).
In a large bowl, whisk together flour, sugar, cocoa, baking soda, and salt.
In another bowl, combine oil, buttermilk, eggs, food coloring, vanilla, and vinegar.
Mix wet into dry ingredients until well blended.
Pour into a greased 9-inch springform pan. Bake for 25–30 minutes, or until a toothpick comes out clean. Let cool completely.
2. Prepare the Cheesecake Layer:
Reduce oven to 325°F (163°C).
In a mixing bowl, beat cream cheese and sugar until smooth.
Add eggs one at a time, mixing well. Stir in vanilla and sour cream.
Pour over the cooled red velvet cake layer.
Bake for 45–50 minutes, or until the center is set. Cool completely, then chill in the fridge for at least 4 hours or overnight.
3. Top It Off:
Once chilled, spread strawberry glaze over the cheesecake layer.
Arrange fresh strawberries on top.
Add whipped cream swirls if desired for extra flair!
