- 3 cups chicken broth
- 1 cup heavy cream
- 2 cups baby spinach
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley or black pepper (for garnish)

Directions:

1. Heat olive oil in a large pot over medium heat. Sauté the onion until translucent, about 3-4 minutes.
2. Add the garlic and mushrooms, cooking until mushrooms are tender and golden, about 5 minutes.
