Ingredients:
For the crust:
1 1/2 cups graham cracker crumbs
2 tablespoons granulated sugar
6 tablespoons unsalted butter, melted
For the cheesecake filling:
24 ounces (3 packages) cream cheese, softened
3/4 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1/2 cup mashed ripe bananas (about 1 to 1 1/2 bananas)
1/2 cup sour cream
For the strawberry topping:
2 cups fresh strawberries, hulled and sliced
1/4 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)
For garnish (optional):
Whipped cream
Sliced fresh bananas
Additional fresh strawberries
Directions:
Prepare the Crust:
Preheat your oven to 325Β°F (163Β°C). In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8β10 minutes, then let cool slightly.
Make the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the sugar and mix until well combined. Beat in the eggs one at a time, then mix in the vanilla extract, mashed banana, and sour cream until smooth.
