MOIST HEALTHY LOW-CALORIE RASPBERRY BREAD 🍓🍞🍓

RECIPE - Serves 1 Loaf
Ingredients 🛒
1 1/4 Cups Raspberries whole or Strawberries, diced
3 Ripe Bananas, mashed
2 Tbsp Apple Sauce
1 1/4 Cups Wholemeal Flour
3/4 Tsp Baking Soda
1/4 Tsp Salt
2 Tbsp Butter, softened
1/2 Cup Light Brown Sugar
2 Large Egg Whites
1 Tsp Vanilla Essence
Non-Stick Cooking Spray
Method:
If using strawberries, place them on a baking sheet and roast them in preheated oven 180C/350F for 25 minutes.
Remove and set aside. No need to do this for the Raspberries.
Preheat oven to 180C/350F.
Spray the inside of a 9x15-inch loaf pan.
In a medium bowl, combine the flour, baking soda and salt.
In a large bowl, cream the butter and sugar with an electric mixer. Add the egg whites, bananas, apple sauce and vanilla and beat until thick.
Add the flour mixture and mix at low speed just until combined, do not over mix.
Fold in the raspberries or strawberries and pour batter prepared loaf pan.
Bake in oven for about 50 mins or until a skewer stick inserted in the middle comes out clean.
Let the bread cool at least 15 minutes before removing from pan.
