Lavender Honey Crunch Cookies 🍯🌸

Ingredients:

1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
½ cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 tablespoon dried culinary lavender buds, finely ground (or 1 teaspoon lavender extract)
½ cup honey
½ cup chopped walnuts or pecans (optional)
Coarse sea salt, for sprinkling (optional)

Instructions:

1. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This is best achieved using an electric mixer. Beat in the eggs one at a time, then stir in the vanilla extract.
3. In a separate bowl, whisk together the flour, baking soda, and salt.
4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
5. Stir in the ground lavender buds (or lavender extract) and honey. If using, gently fold in the chopped nuts.
6. Drop rounded tablespoons of cookie dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
7. If desired, sprinkle the tops of the cookies with coarse sea salt.
8. Bake for 10-12 minutes, or until the edges are golden brown and the centers are still slightly soft.
