Creamy Garlic Parmesan Shrimp Tortellini
Ingredients:
1 lb shrimp, peeled and deveined
1 (20 oz) package refrigerated cheese tortellini
2 tablespoons olive oil
3 tablespoons butter
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
3/4 cup grated Parmesan cheese
1/2 teaspoon Italian seasoning
Salt and black pepper to taste
1/4 teaspoon red pepper flakes (optional)
1 tablespoon fresh parsley, chopped (for garnish)
Directions:
Cook tortellini according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium-high heat. Add shrimp, season with salt and pepper, and cook for 2-3 minutes per side or until pink and cooked through. Remove shrimp and set aside.
In the same skillet, melt butter and sauté garlic for 1 minute until fragrant.
Pour in heavy cream and chicken broth. Stir in Parmesan cheese, Italian seasoning, red pepper flakes (if using), salt, and pepper. Simmer for 3-4 minutes until slightly thickened.
Add cooked tortellini and shrimp back into the skillet. Toss to coat evenly in the sauce.
Garnish with fresh parsley and serve warm.
