Hibiscus Bliss Cake
Ingredients:
For the Cake:
2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup hibiscus tea, cooled
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
Zest of 1 lemon
For the Glaze:
1 cup powdered sugar
2-3 tablespoons hibiscus tea, cooled
Edible flowers for garnish (optional)
Directions:
Prepare the Cake:
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk together the hibiscus tea, vegetable oil, eggs, vanilla extract, and lemon zest.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Bake the Cake:
Pour the batter into the prepared cake pan and spread it out evenly.
Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Remove from the oven and let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Make the Glaze:
In a small bowl, whisk together the powdered sugar and hibiscus tea until smooth and pourable.
Glaze the Cake:
Once the cake has cooled completely, drizzle the glaze over the top of the cake.
Garnish with edible flowers, if desired.
Serve:
Slice and serve the Hibiscus Bliss Cake at room temperature.
