Mint Chocolate Chip Tartlets : Cool, Creamy, Mini & A Decadent Twist on Your Favourite Ice Cream Flavour!

Ingredients:
(Makes 12 mini tartlets — standard muffin tin or tartlet pans)

For the Chocolate Crust:
- 1 1/2 cups chocolate cookie crumbs (like Oreos, with filling removed)
- 4 tbsp unsalted butter, melted

For the Mint Cream Filling:
- 8 oz (226 g) cream cheese, softened
- 1/3 cup powdered sugar
- 1/4 tsp peppermint extract (use more for stronger mint flavour)
- A few drops green food colouring (optional)
- 1/2 cup mini chocolate chips
- 1 tub (8 oz) whipped topping (Cool Whip), thawed or 1/2 cup heavy cream, whipped

Directions:

Step 1: Make the Crust
1. Combine chocolate cookie crumbs and melted butter in a bowl.
2. Press about 1–2 tbsp of the mixture into each muffin tin or tartlet pan.
3. Chill in the refrigerator for at least 20 minutes to firm up.

Step 2: Make the Mint Filling
1. Beat the softened cream cheese and powdered sugar until smooth.
2. Add peppermint extract and food colouring, if using.
3. Fold in whipped topping or whipped cream until light and fluffy.
4. Stir in mini chocolate chips.

Step 3: Fill & Chill
1. Spoon or pipe the mint filling into each tartlet crust.
2. Smooth the tops or create decorative swirls with a spoon.
3. Chill for 2–3 hours or until firm.

Step 4: Garnish & Serve
1. Just before serving, top with a sprinkle of mini chocolate chips, chocolate curls, or a dollop of whipped cream.
2. Serve chilled for a refreshing treat.
