Refreshing Apple Cranberry Carrot Salad
Ingredients:
2 large apples (1 red, 1 green), julienned
2 cups carrots, julienned or shredded
1/2 red onion, thinly sliced
1/3 cup dried cranberries
1/4 cup chopped fresh parsley
For the Dressing:
1/2 cup plain Greek yogurt
1 tablespoon honey
1 tablespoon apple cider vinegar
Salt and pepper to taste
Directions:
In a large mixing bowl, combine julienned apples, carrots, red onion, cranberries, and chopped parsley.
In a separate bowl, whisk together Greek yogurt, honey, apple cider vinegar, salt, and pepper until smooth.
Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
Chill for 15–30 minutes before serving to let the flavors blend.
Serve cold as a refreshing side dish or light lunch.
