Easy Super Seed Bites with Sesame & Chia: Vegan & Gluten-Free 🌱😋⚡️

ingredients:
½ cup (70g) sunflower seeds (raw, unsalted)
½ cup (65g) pumpkin seeds (raw, unsalted)
½ cup (80g) sesame seeds (toasted optional)
¼ cup (40g) chia seeds
¼ cup (30g) ground flaxseed (flax meal)
½ cup (120g) smooth tahini or sunflower seed butter
⅓ cup (80ml) maple syrup or agave nectar
1 tsp vanilla extract (optional)
Pinch of sea salt

directions:
1. Optionally toast sesame seeds lightly in a dry skillet until fragrant; let cool.
2. Line an 8x4 inch loaf pan or small square pan with parchment paper, leaving an overhang.
3. In a medium bowl, combine the sunflower seeds, pumpkin seeds, sesame seeds, chia seeds, and ground flaxseed. Stir well.
4. In a separate small bowl, whisk together the tahini (or sunbutter), maple syrup (or agave), optional vanilla, and salt until smooth.
5. Pour the wet tahini mixture over the dry seed mixture. Stir thoroughly until all the seeds are evenly coated and the mixture is very sticky. It will be thick.
6. Transfer the mixture to the prepared pan. Press down extremely firmly and evenly using a spatula or the bottom of a glass covered in parchment. Pack it tightly.
7. Place the pan in the freezer for at least 1 hour, or in the refrigerator for 3-4 hours, until the mixture is very firm and set.
8. Use the parchment overhang to lift the slab out. Cut into small squares or bites using a sharp knife (it will be dense).
9. Store the bites in an airtight container in the refrigerator or freezer. They hold their shape best when kept cold.
