Pea and Ham Pasta Salad
Ingredients:
300g pasta (spirals or shells work well)
1 cup frozen peas
200g shaved or diced ham
1/2 red onion, finely chopped
1/2 cup whole-egg mayonnaise
1/4 cup sour cream
1 tbsp Dijon mustard
Salt and pepper, to taste
Fresh parsley, chopped (optional)
Instructions:
Cook pasta according to packet instructions. In the last 2 minutes, add frozen peas. Drain and rinse under cold water.
In a large bowl, combine pasta and peas, ham, and red onion.
In a small bowl, whisk together mayonnaise, sour cream, and Dijon mustard. Season with salt and pepper.
Pour dressing over the pasta mixture and toss to coat.
Garnish with fresh parsley, if using. Serve chilled or at room temperature.
