2 tablespoons neutral oil (canola or vegetable)
16 ounces baby bella mushrooms, sliced
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
3 cups low-sodium beef broth
1 teaspoon soy sauce (optional for added depth)
Chopped fresh parsley for garnish

Instructions:
Season the Beef: In a bowl, toss the beef tips with garlic powder, onion powder, salt, and pepper. Mix well.
Sear the Beef: Heat oil in a deep skillet on medium-high. Add beef in a single layer, cooking each side for 3 minutes. Remove and set aside.
Sauté the Mushrooms: Without cleaning the pan, add butter. Once melted, toss in the mushrooms. Cook until they release their moisture (about 5 minutes), stirring occasionally.
Create the Gravy: Sprinkle flour over mushrooms and cook for 2 minutes. Gradually whisk in beef broth and soy sauce. Simmer until thickened.
Simmer the Beef: Return beef to the pan. Cook uncovered for 15-20 minutes, stirring occasionally, until the sauce thickens.
Serve: Pair with egg noodles, mashed potatoes, or crusty bread, and top with parsley.
