Lime Garlic Butter Chicken Bites with Savory Parmesan Linguine
Ingredients:
For the Chicken:
1 lb boneless, skinless chicken breast, cut into bite-sized pieces
Salt and pepper, to taste
1/2 tsp paprika
1/2 tsp Italian seasoning
3 tbsp butter, divided
3 cloves garlic, minced
Zest and juice of 1 lime
Fresh parsley, chopped (for garnish)
For the Parmesan Linguine:
8 oz linguine
2 tbsp butter
3/4 cup grated Parmesan cheese
1/2 cup heavy cream
Salt and pepper, to taste
1/2 tsp garlic powder
Fresh parsley, chopped (for garnish)
Directions:
Cook the linguine according to the package instructions. Drain and set aside.
Season the chicken pieces with salt, pepper, paprika, and Italian seasoning.
Heat 1 tbsp of butter in a large skillet over medium heat. Add the seasoned chicken and cook for 5-7 minutes, until golden and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, melt the remaining 2 tbsp of butter. Add the minced garlic and cook for about 1 minute, until fragrant.
Stir in the lime zest and juice, letting the sauce simmer for 2-3 minutes to allow the flavors to meld.
Return the chicken to the skillet, tossing it in the lime garlic butter sauce. Let it cook for another 2 minutes, then remove from heat.
For the Parmesan linguine, melt 2 tbsp of butter in a separate pan over medium heat. Stir in the heavy cream, garlic powder, and grated Parmesan cheese. Simmer for a couple of minutes until the sauce thickens.
Add the cooked linguine to the sauce, tossing to coat, and season with salt and pepper to taste.
Serve the savory Parmesan linguine topped with the lime garlic butter chicken bites and garnish with fresh parsley.
