Grilled Chicken Recipe
Ingredients
2 chicken legs & 2 thighs or Wings
2 tbsp oil
2 tbsp yogurt
1 tbsp lemon juice
1 tsp salt
1 tsp black pepper
1 tsp red chili powder (or paprika for mild spice)
1 tsp garlic paste
1 tsp ginger paste
1 tsp cumin powder
1 tsp coriander powder
½ tsp turmeric powder
½ tsp garam masala (Optional)
1 tbsp soy sauce
1 tbsp honey or brown sugar (for slight caramelization)
Babaque sauce (optional)
Method:
1. Prepare the Marinade
In a bowl, mix oil, yogurt, lemon juice, garlic paste, ginger paste, and all the spices.
Add soy sauce and honey for a deeper flavor.
2. Marinate the Chicken
Make deep cuts on the chicken legs and thighs to absorb flavors.
Coat the chicken well with the marinade.
Cover and refrigerate for at least 2 hours (overnight for best results).
3. Grilling the Chicken
Outdoor Grill: Preheat the grill to medium-high heat. Grill chicken for approximately 7 minutes per side, basting with leftover marinade, until cooked through.
Oven: Preheat to 200°C (400°F). Place chicken on a baking tray and bake for 35-40 minutes, flipping halfway.
Stovetop: Heat a grill pan, add some oil, and cook on medium heat for 6-8 minutes per side until its fully cooked.
4. Check Doneness
Internal temperature should reach 75°C (165°F). If using a knife, juices should run clear.
Add some babaque sauce if using
