Orange Cranberry Bread
So moist and crunchy on the edges.
Recipe:
1/4 cup butter softened
1/4 cup avocado oil
1 cup sugar
2 eggs
1/3 cup orange juice
1/2 cup buttermilk
2 cups flour
1/2 tsp salt
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tbsp orange zest
1 1/2 cups frozen cranberries
Preheat oven to 350F.
In a large bowl, add butter, oil, sugar, orange juice and buttermilk. Mix well. Add eggs and beat till combined.
Add sifted flour, salt, baking powder, baking soda, and orange zest. Mix with spatula. Then, add cranberries. Mix till well combined but don’t over mix. Pour in a grease loaf pan or with parchment paper. Bake for 1 hr. Let it cool in the rack for 10-15 minutes before slicing. Enjoy!
