Harry Potter Butterbeer Cupcakes

Ingredients:

For the Cupcakes:
1 1/2 cups (190 g) all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (115 g) unsalted butter, softened
1/2 cup (100 g) brown sugar
1/4 cup (50 g) granulated sugar
2 large eggs
1/2 teaspoon butter flavoring
1/2 teaspoon vanilla extract
1/2 cup (120 ml) buttermilk
1/4 cup (60 ml) cream soda

For the Butterscotch Filling:
1/2 cup (90 g) butterscotch chips
1/4 cup (60 ml) heavy cream

For the Butterbeer Frosting:
1/2 cup (115 g) unsalted butter, softened
1/2 cup (100 g) brown sugar
1/4 cup (60 ml) cream soda
1/2 teaspoon butter flavoring
2 cups (240 g) powdered sugar

Directions:

Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
In a bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
Cream together butter, brown sugar, and granulated sugar until fluffy. Beat in eggs, vanilla, and butter flavoring.
Add dry ingredients alternately with buttermilk and cream soda until just combined.
Fill cupcake liners 2/3 full and bake for 18–20 minutes. Cool completely.
To make the filling, melt butterscotch chips with cream until smooth. Cool slightly and fill each cupcake center with a teaspoon of filling.
For frosting, cream butter and brown sugar until smooth. Add cream soda, butter flavoring, and powdered sugar. Beat until fluffy.
Frost cupcakes and drizzle with extra butterscotch if desired.
