Keto Breakfast Plate with Creamy Scrambled Eggs, Mushrooms & Avocado 🍳🥑
Ingredients:
- ½ avocado (sliced)
- ½ cup mushrooms (sliced)
- 3 large eggs
- ½ cup steamed broccoli
- 1 tbsp butter
- 1 tbsp heavy cream (optional for extra creaminess)
- 1 tsp olive oil or butter (for sautéing the mushrooms)
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp olive oil or butter (for drizzling on broccoli)
Instructions:
1. Begin by preparing the scrambled eggs. In a bowl, whisk together the eggs, heavy cream (if using), salt, and black pepper until well combined.
2. Heat a non-stick pan over low heat and add 1 tablespoon of butter. Allow the butter to melt, making sure it does not brown.
3. Pour the egg mixture into the pan. Use a spatula to gently stir the eggs continuously, cooking them slowly until they become soft, fluffy, and creamy. This should take about 3-5 minutes.
4. While the eggs are cooking, heat another pan over medium heat and add 1 teaspoon of olive oil or butter.
5. Add the sliced mushrooms to the pan, seasoning with garlic powder, salt, and pepper. Sauté for 5-7 minutes until the mushrooms are golden and tender.
6. In the meantime, steam the broccoli until it's tender-crisp, about 3-4 minutes.
7. Once everything is cooked, slice the avocado and arrange it beautifully on your plate alongside the scrambled eggs, sautéed mushrooms, and steamed broccoli.
8. Drizzle a bit of olive oil or melted butter over the broccoli for added flavor. You can also sprinkle some extra black pepper or chili flakes on top for a spicy kick, if desired.
