Old Fashioned Martha Washington Candy
Ingredients:
1 cup (226g) unsalted butter, softened
1 (14 oz) can sweetened condensed milk
2 cups (160g) shredded sweetened coconut
1 1/2 cups (180g) chopped pecans
1 jar (10 oz) maraschino cherries, drained and chopped
2 lb (900g) powdered sugar
2 cups (340g) semisweet chocolate chips
2 tbsp shortening or coconut oil
Directions:
In a large mixing bowl, beat the softened butter until smooth.
Add the sweetened condensed milk and mix well.
Stir in shredded coconut, chopped pecans, and cherries until evenly combined.
Gradually add in the powdered sugar and mix until a thick dough forms.
Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
Freeze the balls for 1 hour, or until firm.
Melt the chocolate chips and shortening in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
Dip each frozen candy ball into the melted chocolate using a fork, allowing excess to drip off.
Place the dipped candies back on the parchment and let set at room temperature or refrigerate until firm.
