This Strawberry Earthquake Cake is as fun to make as it is to eat! Bursting with strawberries and creamy swirls. 😍🍓
Ingredients:
1 box strawberry cake mix
1 cup water
½ cup vegetable oil
3 large eggs
8 oz cream cheese, softened
½ cup unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract
1 cup chopped strawberries (fresh or frozen)
1 cup white chocolate chips
1 cup shredded coconut (optional)
Directions:
Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
In a large bowl, prepare the cake mix according to the package instructions using water, oil, and eggs. Pour the batter into the prepared baking dish.
In a separate bowl, beat the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, mixing until creamy.
Drop spoonfuls of the cream cheese mixture over the cake batter. Use a knife to swirl the cream cheese into the batter, creating a marbled effect.
Sprinkle the chopped strawberries, white chocolate chips, and shredded coconut (if using) evenly over the top.
Bake for 40-45 minutes, or until the cake is set and a toothpick inserted into the center comes out clean.
Allow the cake to cool slightly before serving.
