One-Skillet Beef Stroganoff Tortellini

🧑🍳 Ingredients:
1 lb (450g) beef (sirloin or stew meat), cut into thin strips
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon paprika
1 cup beef broth (or water)
1 cup sour cream
1 tablespoon Dijon mustard (optional)
8 oz (225g) cheese tortellini (fresh or frozen)
½ cup heavy cream
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Grated parmesan cheese (optional)
🔪 Instructions:
1. Cook the Beef:
Heat the olive oil over medium-high heat in a large skillet.
Add the beef strips and cook, stirring occasionally, until browned (about 5-6 minutes). Remove the beef from the skillet and set it aside.
2. Sauté the Vegetables:
In the same skillet, add the chopped onion and garlic. Cook for about 2-3 minutes, until softened and fragrant.
Stir in the paprika and cook for another minute to toast the spices.
3. Add the Broth and Tortellini:
Pour in the beef broth and bring the mixture to a simmer. Once simmering, add the tortellini to the skillet. Stir to combine, making sure the tortellini is submerged in the liquid.
Cook according to the package instructions for the tortellini (usually 4-6 minutes for fresh, or 8-10 minutes for frozen).
4. Make the Sauce:
Once the tortellini is cooked, reduce the heat to low. Add the sour cream and Dijon mustard (if using), stirring until the sauce is creamy and smooth.
Pour in the heavy cream and return the cooked beef to the skillet. Stir to combine and heat through.
5. Season and Garnish:
Season the dish with salt and pepper to taste.
Garnish with chopped fresh parsley and a sprinkle of grated parmesan cheese, if desired.
