Mom’s Fried Potatoes and Onions
Ingredients:
4 medium potatoes, peeled and sliced thin
1 large onion, thinly sliced
2 tbsp olive oil or butter
1 tsp garlic powder
1/2 tsp smoked paprika
Salt and pepper to taste
Fresh parsley (optional, for garnish)
Directions:
Heat the olive oil or butter in a large skillet over medium heat.
Add the sliced onions and cook for about 3-4 minutes until they begin to soften.
Add the sliced potatoes to the pan and stir to combine with the onions.
Season with garlic powder, paprika, salt, and pepper, and stir again to ensure the potatoes are well coated with the seasonings.
Cover the skillet with a lid and cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender and golden.
Once the potatoes are cooked through and crispy on the outside, remove from heat and serve hot.
Garnish with fresh parsley for a touch of color and extra flavor. Serve alongside your favorite main dish!
